How can I get the “show posts comments” line to read “show 1 comment”, “show 2 comments”, etc? I removed the one from the theme itself to remove clutter. Is this possible? Thanks.

Use %count in the comment show or hide text. If you don’t like the text the %count tag uses, you can change what %count does in the “Overall Options” tab.
